An original and creamy recipe with southern flavours.
The ingredients of this olive puree? Picholines (a very fruity and herbaceous olive), asparagus, lemon and parsley. And that's it. Smooth and very aromatic, this little purée is a real concentrate of Cévennes. It can be enjoyed on toast, as an accompaniment to fish, or to enhance a tomato sauce.
It is on the Hérault side of Cévennes that the family Barthélémy that the family cultivates and preserves olives. Father and son cultivate nearly 3000 olive trees, mostly of local varieties. All stages of processing are carried out in their workshop, for a 100% Cévenol product.
Conservation: Pasteurised product. Store in a cool place after opening and consume quickly.
