The sweetness of this flour comes from the variety used: the Figarette. This small chestnut is harvested by hand and processed directly on the farm (drying, shelling, sorting and grinding with a stone millstone). You will find the chestnut in its natural state, ideal in a cake, a sauce or to thicken a soup.
In the heart of the Basses Cévennes, where there is a high concentration of chestnut trees, she works as a castaneicultrice, chestnut producer. Passed down from generation to generation, this profession has become a passion. Camille She is therefore perpetuating the family know-how on her farm, following a local, ethical and organic line of conduct.
