A gourmet and very local agreement: the Gaviotte, stewed sweet onions of the Cevennes with peppers.
The Cévennes sweet onion meets the bell pepper, and together they form this compote with Mediterranean flavors. This excellent condiment is perfect as an aperitif on small toasts, spiked on tacos or to enhance a starter.
In the heart of the Cévennes, Laurent Cabanel is a producer of sweet onions from the Cévennes, in Saint-André-de-Majencoules. The very steep relief of this region makes agriculture and water transport difficult. The onions are therefore cultivated on faïsses (terraces) that carve out the slopes of the mountains.
Conservation: Always eaten cold, keeps for several months in the refrigerator after opening.
Ingredients: Sweet onions of Cevennes (60%), red peppers (30%), tomato coulis, sherry vinegar, chestnut flour, olive oil, salt, pepper, paprika.
