A creation by Cédric in honour of the mining past of Cévennes : the Terril d'Alès.
A dark chocolate shell in the shape of a slag heap, containing a raspberry caramel reduced with balsamic vinegar and a hint of organic chilli from Cévennes : this is Cédric's original creation. It is eaten in one bite, to appreciate the unique combination of these ingredients.
It's been 10 years that Cédric has been working with chocolate with passion in Alès, in the Gard region. The cocoa beans are roasted and crushed on the spot with a stone grinder: a traditional production process of which Cédric can be proud. By creating partnerships with local producers, he never stops promoting Cévennes and its gastronomic wealth.
