This French variety, now grown all over the world, originates from the Gard region. It is appreciated for its very fruity and green taste. There is a slight hint of bitterness and grassy notes of hay on the finish. As an aperitif, these olives will be a sensation, to be eaten as a snack or as cocktail olives.
It is on the Hérault side of Cévennes that the family Barthélémy that the family cultivates and preserves olives. Father and son cultivate nearly 3000 olive trees, mostly of local varieties. All stages of processing are carried out in their workshop, for a 100% Cévenol product.
