Cut in large regular slices, you just have to rehydrate them so that they release all their aromas and perfume your dishes (sauces, stewed dishes, vegetables in accompaniment...).
According to Loïc and Florimond, from Champilozère, the Lozère cep is "the best cep". These two childhood friends select, clean and dry the mushrooms in an artisanal way, by surrounding themselves with collectors of the region.
Use: count 10g per person, let soak in warm water for 1 hour. After rehydration, pour the mushrooms into a colander. Drain well and cook like fresh.
Tip: Do not throw away the soaking water and use it to garnish sautéed vegetables for example.
Storage: Store in a cool dry place away from light, ideally in the freezer.
