Fan & Jicé are two farmers passionate about figs and olives in a 10-hectare farm located in the Cévennes Piedmont. They cultivate 14 varieties of figs, 3 main varieties of olives and grow annual crops of fruits and vegetables in the field, all in agro-ecology. Fan is the queen of the kitchen and Jicé the master of the culture.
Almost all of the orchards are under total and permanent grassing, controlled by shredding on the inter-row and back-cutting on the row. Orchards less than four years old are weeded by mechanical tillage in summer, in order to limit water competition and thus water consumption. To date, a quarter of the orchards are irrigated with micro-sprinklers, the rest are "dry".
Their fruits and vegetables are harvested at perfect maturity, in order to have the best possible flavors. They are farmer-cooks, everything that is harvested is transformed, which is why they can afford this type of harvest. During the seasons, they harvest by hand every morning, sort the fruits and vegetables and process them in the process.
