Truffe Sud Cévennes

"It is now 25 years since I discovered the world of truffles, a knowledge passed down from generation to generation."

The truffle, at Truffe Sud Cévennes, is a family know-how that is transmitted from generation to generation. It was in 1995 that Sébastien discovered the world of truffles, initiated by his father-in-law. Since then, in Saint-Hippolyte-du-Fort, at the gates of the Cévennes gardoises, his passion for this "black diamond", as he calls it, has not stopped growing.

Over time, he has deepened his knowledge of this mushroom and the passion has given him the desire to share this culinary treasure by offering to taste his products from his harvests. To do this, he restores old truffle tree plantations or wild truffle fields. In this way, he contributes to the preservation of a land and a know-how.

His truffles are picked under green and white oaks or under some rare lime trees, hazelnut trees, pine trees and kermes oaks still producing in the wild. The truffle production period begins in December and ends in March.
