Wild thyme jelly: the garrigue in a pot.
Not very sweet, intensely flavoured, this jelly has the gift of sublimating dishes. Thyme grows in the heart of the Cévennes scrubland, making the most of this pollution-free environment. It will be the perfect partner for a creamy pélardon (goat cheese), or will flavour a tea with brio.
Marie-Angèle chooses and picks this thyme which grows in the garrigue, near Anduze in the Gard. She then dries it in the open air, before cooking it with care. She honours this Cévennes land, both arid and generous, which is so dear to my heart.
Preservation: Keep it in a cool place and consume it quickly after opening. No preservatives added.
