The olives that are at the heart of this oil are the Rougette and the Negrette. To the eye, they are olives with a beautiful black color. In the mouth, they give an oil with an intense and balanced fruity flavor. Perfect for your salads, this oil will also enhance any cooked dish (but add it at the end of cooking!).
Created in 1887, the Moulin à huiles des Mages is one of the oldest mills in France. The oil is extracted according to a traditional method, with the olives crushed with the Génoise. Two stone millstones, operated by an ingenious system of gearing, ensure the show in the workshop. It is one of the last mills to perpetuate the tradition of the "levée de l'huile à la feuille": the oil is decanted and not filtered.
