Pépites des Cévennes

"I make my chocolate from pure organic cocoa beans in order to highlight the natural variations in flavors of each harvest and each terroir."

It is in Alès, in the Gard region, that Cédric makes his own chocolate: he rigorously selects his organic, fair trade cocoa beans, which he roasts and transforms. This artisanal manufacturing process is what is called "Bean to Bar" chocolate. He elaborates his bars from atypical and rare organic cocoa beans coming from countries like India, Brazil, Ecuador, Mexico... With a human and sustainable approach.

Pépite des Cévennes conveys for Cédric his attachment to his region and his passion for quality artisanal chocolate. For this, he develops original recipes by highlighting a product or producers of the region. And it is in this sense that I chose to work with him.  

The chocolate is created with care and precision, a fine transformation where each step is mastered to express the subtleties and origins of the product. It is by mastering the entire manufacturing process that Cédric values the work of the cocoa bean producers and the local producers.
