A sweet and slightly smoked organic chestnut flour.
Michel uses a very special variety to make his flour: figarettes. These small fruits, naturally sweet and with a very specific taste, give this delicious and original flour. Michel's secret is to dry his chestnuts in a clède* over a wood fire, according to the Cévennes tradition. The result is a fragrant flour, perfect for gluten-free recipes full of delicacies.
At the Valbonne Farm, Michel harvests his chestnuts by hand. By drying them over a wood fire, he takes care to gently reveal all their aromas, respecting the ancestral know-how of Cévennes. The chestnuts are then slowly ground on a stone millstone to produce this superb flour.
*The clède is a small building where the chestnuts are slowly dried for 21 days on a grilled floor on the first floor thanks to an ember fire lit below. This drying process transforms all the starches into slow sugars.
Storage: Store your unopened bag in the refrigerator. Once opened, put it in an airtight container.
