At the Moulin des Mages, the olives are harvested by hand, without the use of mechanical processes, in respect of the tree and to select the best fruits. The result is an oil that is rich in flavor but quite sweet in the mouth.
Created in 1887, the Moulin à huiles des Mages is one of the oldest mills in France. The oil is extracted according to a traditional method, with the olives crushed with the Génoise. Two stone millstones, operated by an ingenious system of gearing, ensure the show in the workshop. It is one of the last mills to perpetuate the tradition of the "levée de l'huile à la feuille": the oil is decanted and not filtered.
Varieties: Picholine 50%, Rougette 25% and Négrette 25%.
