Nestled in the heart of the Cévennes, at the foot of Mont-Aigoual in the Gard, the Valbonne farm produces tasty products based on chestnuts and onions.

Michel is a producer and processor of chestnuts in the Cévennes. He is a passionate and committed person. He was a precursor in the field of bio and ecology. From the beginning of his installation, in the 70s, he followed the principles of organic farming and biodynamics. At the farm, he ensures all year long the maintenance of his chestnut trees, the harvest of chestnuts, the creation of jams or creams and the setting in jar. This guarantees a product with a color and taste faithful to that of the Cévennes.

For the transformation of the chestnuts, he works as the ancients did, using a wooden clède to dry the chestnuts and a stone millstone to make flour. Using these slow processes is a desire to respect the product and its quality. He works his products in a natural way, respecting the traditions and the land.
